We prepare the marinade by adding in a blender the olive oil, the mustard, the garlic, the maple syrup and the fresh herbs. Then we salt and pepper the meat and tie it with a string. We place the meat in a hut with the broth and cook in 160ºc for 4.5 to 5.5 hours. When the meat is ready, uncover the hut, and increase the heat in 180 º c for another 15 minutes until it gets a light brown color. We can add a whole orange, cut in four pieces and with its zest to marinate the meat’s skin.
We cut the potatoes in large pieces and place them in a tray with the onions also cut in slices, the carrots, the olive oil, the cinnamon stick, the rosemary, the salt and the maple syrup. We add the broth and continue cooking for another hour in 160ºc.
