Fried pork (tigania) En Elladi, with celery and fennel

Fried pork aromatized with celery, fennel, and chili. A spicy dish that you can offer to your guests as an appetizer.


    • 1 kg En Elladi pork
    • 100 g fresh onion
    • 200 g celery
    • 200 g fennel
    • 5 g smashed garlic
    • 10 g chopped chili
    • 1 lime
    • 100 g olive oil
    • 7 g salt
    • 3 g pepper
    • 5 g oregano
    • 2 g thyme


In a large pan, we add the olive oil and wait until it is well heated. Cut the meat in blocks of 2cm, salt and pepper it and cook until thickened. When the meat is ready, add the garlic, the chili, the onion and the thyme. Cook for 1 more minute. After that add the sliced fennel, the celery and cook for 2 more minutes. Your fried pork is ready. Before serving dress with lemon juice, zest, and oregano.

Extra tip: You can make your fried pork pan with pancetta-neck or shoulder blade-pancetta meat.
