Whole grain penne salad with En Elladi cooked turkey, papaya and citrus fruit marmelade

Wholegrain penne pasta, gets a unique gourmet taste by adding En Elladi cooked turkey, low-fat yogurt, papaya and red pepper. A healthy, fast solution with excellent results.

ingredients

    • 300 g of penne pasta
    • 200 g En Elladi Gourmet cooked turkey
    • 200 g of low-fat yogurt 2%
    • 10 ml of apple vinegar
    • 15 g mild mustard
    • 40 ml olive oil
    • 150 g citrus jelly
    • 200 g papaya
    • 70 g celery
    • 30 g red pepper
    • 40 g of cooked almonds
    • 4 g salt
    • 2 g black pepper
    • 2 g curry
    • 2 g black pepper

Penne pasta
Boil the pasta for 10 minutes. When ready spread it in a tray and mix with olive oil. Let it cool.

Dressing
In a mixer add the yogurt, the vinegar, the mustard, the olive oil, the curry powder and the marmalade and whisk.

Salad
Cut the turkey in triangles as well as the papaya, the celery, and the red pepper. Add all the ingredients in a large bowl and mix. Your salad is ready.

Serve it with roasted almonds, salt, and pepper.

Extra tip: You can use any seasonal fruit instead of papaya.
