Salty pancakes with Sfakiana sausages and Scrambled eggs

The traditional Sfakiana sausages in Greece are combined with scrambled eggs. An alternative suggestion for salty pancakes for a different breakfast and more.

ingredients

    PANCAKES

    • 200 g of flour
    • 260 ml of milk
    • 20 g Olive oil
    • 15 g  baking powder
    • 5 g salt
    • 5 g of sugar
    • 1 egg

    SCRAMBLED EGGS

    • 3 eggs
    • 50 ml full fat cream
    • salt, pepper
    • 5 g chives

Pancakes
In a bowl, mix the flour, baking powder and the spices and in another bowl, milk, egg and olive oil. Put them all together in a mixer and mix them for 10 minutes. The mixture should rest in the refrigerator for 30 minutes and is ready to go. In a hot frying pan with a small amount of fat, fry the pancakes and remove them from the pan.

Scrambled eggs
In a non-stick pan, add the eggs and spices and stir until the mixture is cooked, add the cream and finally the chopped chives. Stir again.

Serving
Bake sausages in the grill or in the oven at 200oC for 10 minutes. We serve the pancakes.

Tip: Scrambled eggs must have a creamy appearance.
